I see that you say it can handle the flop turn and River on hold them but how does it handle the burn card before each of those?

The MAX6 handles the burn cards automatically. After dealing hole cards, each time you press the deal button again, it will burn the necessary card before dealing the flop, turn, and river in the correct order.

Can you use plastic playing cards ala Copag or Faded Spade with the shuffler/dealer?

Just note that it won’t skip specific seat positions; it will deal to the first 6 spots in order. If someone leaves the game, you can either shift seating slightly or simply collect your cards, even if they’re not dealt directly to you.
